Bliss in a Dish (Chickpeas and Artichokes)
This recipe comes from the accomplished chef Dreena Burton, who manages to make her food both healthy and delicious. Seek out one of her many cookbooks, or visit her website. Some of her recipes use oil but can be adapted.
Try this dish and see if it doesn’t fit the title. How can something so virtuous taste so good?
One of my favorite things in the world is basil pesto. I love it on pasta, served with marinated garden tomatoes. One of the things I like about this Bliss dish, is that it is another stellar way to use pesto sauce. It turns out pesto is great on potatoes, beans and roasted veggies as well!
Don’t forget, pesto is very versatile. If you have lots of fresh oregano, you can add that or substitute it for the basil. You can use your choice of nuts or seeds as well (walnuts, almonds, cashews, pumpkin seeds–you get the idea). If you are nut free or following an Esselstyn-style or Jumpstart diet, you can leave out the nuts.
Enjoy!
