Brown Rice Hazelnut Burgers

This recipe uses a product called TVP (texturized vegetable protein) which is definitely both a fractionated (just the protein) and a processed food. I like to use it occasionally because it gives a definite meaty texture. These burgers are so full of whole food ingredients (veggies, whole grains, nuts) that I feel it balances out. However, if that is not WFPB enough for you, look to the next recipe or the one that came before!

The recipe for these burgers comes from Julie Hasson’s Vegan Diner, which is a little gem of a book and very stylish. You can visit Julie’s Kitchenette at juliehasson.com. She has at least a half dozen cookbooks, including one called Vegan Casseroles (yum). My internet searches reveal that Julie is an educator and has also written extensively for teachers, e.g., The 10-Minute Pause for Busy Teachers.
