Cauliflower Mash
This recipe is taken from How Not to Diet Cookbook by Michael Greger. It is actually part of a recipe for Portobellos and Spinach on cauliflower mash with miso-mushroom sauce.
Ingredients:
1 head of cauliflower, trimmed and cut into pieces (I leave them rather large as long as they get soft enough to put in a blender)
1 tbsp of nutritional yeast
1 tsp white miso paste
2 tsp roasted garlic (I use minced garlic)
Steam cauliflower in a steamer basket over an inch or two of boiling water until soft, about 10-15 minutes. Transfer to a food processor or blender and add nutritional yeast, miso paste, and garlic. Mash or puree until smooth. Adjust seasonings as needed.
