Chard and Red Lentil Soup
Here is a recipe from one of my favorite cookbook authors, Robin Robertson, and from one of my favorite cookbooks, Quick-Fix Vegan. It doesn’t get much easier than this recipe. Red lentils cook almost instantly (well, they only take a few minutes); well-prepared cooks should always have red lentils in the pantry (they are delicious too!). Chard only needs to heat through and wilt in order to be delicious; nice if you just happen to have some chard from the garden. Any type of chard will work, and you could use another dark leafy green as well, though kale will take longer to cook. This recipe is for one of those days when you want to take it easy (or when things are so hard, you have no time) . . . .
