Chickpea Frittata
Ingredients:
3/4 cup water
1/3 cup chickpea flour
1 cup grain of choice (I used farro here) or cubed cooked potato
1 to 1.5 cups sautéed or steamed veggies of choice (I used leftover steamed broccoli here)
Spices of choice ( I used pepper, onion powder, garlic powder, and Italian seasoning)
Instructions:
Whisk the chickpea flour into the water in a medium bowl. Add spices as desired. Stir in grains or potatoes and veggies. Pour into a nonstick pan (I used a ceramic pan, preheated according to instructions) and smooth out evenly across the pan. Cook on low to medium heat for about 20 minutes or until the top has firmed up and is brown. I use a spatula to divide it into four pieces to transfer to a plate. I love sprinkling Table Tasty on top. Nutritional yeast would be good too.
Comments: a batter of chickpea flour and water “sets up” like eggs do in a frittata. This makes an all-in-one meal, as it contains beans, veggies, and grains!
