Creamy Broccoli Soup
This wonderful soup is another great recipe from Isa Chandra Moskowitz, where she calls it Cheddary Broccoli Soup. You can make a creamy soup featuring almost any vegetable, by following this recipe and subbing it in (cauliflower, zucchini, etc.).
ICM makes the dish by creating her own cashew cream with soaked cashews (she has a mantra in the book, ABS, “always be soaking” cashews). It’s somewhat easier if you start out with cashew butter, as I do.
This hearty soup can be a main dish, but would be good with some whole-grain bread and a green salad on the side.
For 8 years, from 2012 to early 2020, Dr. Barnett taught a Plant-Based Diet course and I provided the recipes and food samples. In 2013, when Isa Does It came out, one of our students announced to me, with a little bit of an edge: “This is the kind of vegan food I want to make.” I was a little miffed at the time, but I had to admit she had a point: these are great recipes with beautiful photos and a stylish layout that inspire you to cook them. It’s a classic!
