Donna H - Mango Ginger Cookies

These cookies won’t win a beauty contest but are delish!

Ingredients

1 c. frozen mango

2 medium bananas

1 t. fresh grated ginger

2 to 3 c. rolled oats

Instructions

  • Preheat oven to 350 degrees.

  • Heat frozen mango pieces in microwave until they soften (about 4 minutes). Chop half of the mango into pieces and mash the other half.

  • Mash the bananas and combine with the mango and ginger.

  • Stir in rolled oats ½ cup at a time until you achieve the desired consistency. (I look for a batter that holds together and is moderately moist.)

  • For moist cookies, scoop the batter into balls. If you prefer chewy cookies, flatten the cookie balls. Place cookies on a parchment-lined baking sheet.

  • Bake for 12 minutes.

Tip for Having Fresh Ginger on Hand: Add washed, unpeeled ginger to a food processor and use the steel cutter blade to grate it. Use a 1 tablespoon measuring spoon to make ginger scoops. Arrange the scoops on a parchment-lined baking sheet. Place baking sheet in freezer until the scoops are firm. Transfer the scoops along with the parchment paper to an air-tight container and store in the freezer.
