Goddess Noodles with Tempeh and Broccoli
This recipe is a synthesis of many different recipes I’ve encountered for Goddess Dressing and Goddess Noodles.
You can’t have too much broccoli, and this recipe reminds you of the technique, set forth by Dr. Greger in Nutrition Facts, to develop the antioxidant sulforaphane. It’s also a good way to get tempeh, which I know is a good food but sometimes struggle to love. As a side note: I don’t always like sweet ingredients added to entrées, but the blackstrap molasses here adds a powerful hit of umami along with the sweetness.
Blackstrap molasses contains many nutrients, including calcium, iron, magnesium, and vitamin B6. I don’t buy everything organic, but I like to buy organic blackstrap molasses: it’s a concentrated substance derived from processing sugar, and you won’t get pesticides from the organic product.
This is a rich dish that is full of nourishment, so enjoy guilt-free!
