Good Tofu & Mac and Cheese + Cheesy Broccoli

Lisa of Lisa’s Project: Vegan has been vegan since New Year’s Day 2007. She subsequently met her future husband, who was already vegan. They had a son in 2009 and, after enjoying all the vegan restaurants and food options in New York City, Lisa learned to cook! She has the eCornell Plant-Based Nutrition certificate, and she is a certified graduate of the Rouxbe Professional Plant-based Course as well as a a graduate of the Rouxbe Essential Vegan Desserts course (I didn’t even know there was such a thing!).

Lisa writes: “Yes, it can be a challenge to be vegan but who cares! Cooking is super fun and I know we are doing the right thing for our health, for the health and welfare of the animals and that of the planet. Plus, everyone who joins us for a meal leaves fully satisfied and with a handful of recipes. Secret: make amazing desserts!

“Trust me, my recipes are easy. If they weren’t, I wouldn’t be in the kitchen at all. I am busy and you probably are too. So, I prep ahead, use fresh ingredients, and utilize my pantry and freezer.”

I hope you enjoy the recipe I featured: The Good Tofu & Macaroni and Cheese & Cheesy Broccoli. It does still contain one non-WFPB ingredient (vegan butter) but gives an idea for a work-around. This meal sounds like the ultimate comfort food, with broccoli to give it respectability.
