Green Scrambled Tofu
This recipe is my attempt to capture the deliciousness of what used to be my favorite dish at Strong Hearts Cafe, located in Syracuse, NY (2 locations) and now in Buffalo, NY. Green Scrambled Tofu is not on the menu any more but lives on in our household.
Ingredients:
One 14-16 oz package regular* firm or extra-firm tofu
1/4 cup white wine, sherry, dry vermouth or veg broth
One small or medium onion, peeled and chopped
1-2 cloves garlic, minced
Assorted green vegetables, trimmed and chopped: broccoli, green beans, zucchini, green bell pepper, scallions, parsley, cilantro
1/4 tsp salt
1 to 2 tsp dried basil or oregano or a mix
1 tsp turmeric or mild curry powder
1 tbsp or more nutritional yeast (towards the end of cooking)
Directions:
Start with one package regular firm or extra-firm tofu. Place tofu in large bowl and mash with a fork or potato masher. In a large pan or pot, sauté some onion in the white wine or other liquid. Add the chopped veggies in order so that all will be done as you like them at the end of sautéing (perhaps add them in the order that I list them). When the veggies are cooked but still crisp, add the mashed tofu, salt, basil and/or oregano, and turmeric or curry powder (for color and flavor). When the tofu is heated through and the veggies are done as you like them, add the nutritional yeast and stir to mix. It’s ready to serve!
Notes:
There’s no law that says you can’t use silken tofu (usually available in a shelf-stable aseptic package) instead of regular tofu. It has a more custard-like texture than regular tofu. Also no law that says you can’t add vegetables that aren’t green!
If you fussy about the texture of your cooked veggies, you can steam them separately and add them to the scrambled tofu at the end.
You can definitely sub in fresh herbs for the dried herbs, and feel free to add other herbs not listed.
If you like a creamier result, you can whisk a little tahini into the Green Scrambled Tofu at the end. Also good with sliced avocado served on the side. Not a low-fat meal!
