Greens & Spirals Delight

Ingredients:

·       1 box of Banza Gluten Free Brown Rice Rotini

·       1 can of Organic Crushed Tomatoes

·       1 sliced organic red peppers (fire roasted)

·       3 green zucchinis

·       5 Baby Bella Cremini Mushrooms sliced

·       1 bag of arugula

·       1 bag of spinach

·       10 chives diced

·       1 yellow onion

·       6 mini sweet peppers sliced

·       1 tbsp minced garlic

·       1 tbsp nutritional yeast

·       1 tbsp fresh parsley, chopped

·       1 tbsp garlic powder

·       1 tsp oregano

·       1 tsp paprika

·       Dash of salt and pepper

Pasta Instructions:

·       Boil Water: Fill a large pot with water (about 4–6 quarts per box of pasta). Add a pinch of salt. Bring to a rolling boil over high heat.

·       Add Pasta: Add the brown rice rotini to the boiling water. Stir gently to prevent sticking.

·       Cook Until Tender: Cook according to the package instructions—usually 10-13 minutes—until the pasta is al dente (firm to the bite). Stir occasionally.

·       Drain & Rinse: Drain the pasta in a colander.

Vegetable Tomato Sauce Instructions:

·       Prep the Vegetables: Wash and slice all fresh vegetables: zucchinis, mushrooms, mini sweet peppers, onion, chives. Dice the chives and chop the parsley.

·       Sauté Aromatics: In a large skillet or saucepan, add the minced garlic, diced onion, and chives. Sauté for 2–3 minutes until fragrant and translucent.

·       Add Peppers & Mushrooms: Stir in the sliced mini sweet peppers, fire-roasted red pepper, and Baby Bella mushrooms. Cook for 4–5 minutes until softened.

·       Add Zucchini: Add the sliced zucchinis and cook for another 3–4 minutes, stirring occasionally.

·       Pour in Tomatoes: Add the can of organic crushed tomatoes to the pan. Stir well to combine.

·       Season the Sauce: Mix in the garlic powder, oregano, paprika, salt, and pepper. Simmer uncovered for 10–15 minutes, stirring occasionally.

·       Finish with Fresh Herbs and yeast: Stir in the chopped parsley and nutritional yeast just before serving for a fresh, herbal finish.

·       Mix the sauce and the cooked pasta together.
