GROATnola (shameless stolen recipe)
Have I no shame? Guess not! This is a version of “granola” taken from Dr Greger’s NutritionFacts.org website. This is a picture taken just before I put them into the oven at 250° for 2 ½ hours.
Ingredients:
1 cup buckwheat groats, rinsed
pulp from one large sweet potato
1-2 tsp Cinnamon
2-3 tsp Pumpkin Pie Spice
12 cups rolled oats.
Instructions (directly stolen form Dr Greger’s website):
1) Preheat oven to 250°
2) Boil 1 ½ cups water and add 1 cup of uncooked buckwheat groats, lower heat, simmer 10 minutes
3) After nuking the sweet potato, add to cooked groats in a large bowl and mash until well combined, ADD Spices now, both the Cinnamon and the Pumpkin Spice
4) Add 8-12 cups of rolled oats, less gives you clumpier granola,
5) Line baking sheets with parchment paper, spread granola on the sheets (you’ll need a couple of large cookie sheets for this quantity. BAKE 2 ½ hours
Let cool.
Can be used as breakfast cereal or snacking during the day.
Not difficult but it does take a bit of time.
