Bruce A. - Instant Pot Lentil Curry

Ingredients

1 pound dry lentils (green)

1 medium onion, diced

3 cloves garlic, crushed

1-inch piece ginger, peeled and grated

½ tablespoon sweet curry powder

½ tablespoon garam masala

1 can (14.5 oz) diced & fire roasted organic tomatoes (Trader Joes)

5 cups water

Instructions

Put the dried lentils in a strainer and rinse thoroughly with cold water. Let stand to drain while you prepare the rest of the recipe.

Using sauté mode on Instant Pot add the onion, garlic, and ginger to the pot.

And curry powder and garam masala.

Sauté until the onion softens and the spices starts to smell toasty, about 5 minutes.

Stir the lentils into to the pot, scraping the bottom of the pot to loosen any browned onions or spices.

Add can of diced fire roasted tomatoes.

Pour in the 5 cups of water.

Lock the lid and pressure cook on high for 12 minutes using a quick pressure release.
