Joe J. - Oven or Air Fried Potato Disks
So simple and delicious.
Ingredients:
1 lb potatoes, unpeeled, any variety of white potatoes
Your favorite seasonings (optional; see comments)
Malt vinegar or any other favorite condiment
Instructions:
Slice the potatoes widthwise quite thick, about ¼ inch, into disks.
Sprinkle or toss with your favorite seasonings, if desired.
Air Fry: Air fry at 400° for about 18-20 minutes; turn or toss/stir about halfway during cooking, depending on your air fryer. My air fryer has a rack with heating elements above and below, so no need to turn.
Oven Bake: Bake at 400° at 10 minutes or so per side (about 20 minutes total), using either a no-stick baking sheet, or parchment paper or silicone mat on a baking sheet.
Comments:
So many prepared seasoning blends are great, or simply use sprinkle or toss with garlic powder, onion powder, chili powder, dried oregano, nutritional yeast, and black pepper.
I’ve even tried a Greek-style version that’s worked quite well: Toss with some fresh lemon juice, then toss again with dried oregano, garlic powder, black pepper, and perhaps some nutritional yeast. You’ll need to air fry or bake them a bit longer to dry out the lemon juice. And, oh, the wonderful kitchen smell . . .
Most of the time, however, I just cook them plain, and dip into malt vinegar, mustard and ketchup, or some Sriracha sauce.
