Jumpstart Charcuterie
This “recipe” is a do-it-yourself meal or party tray.
Ingredients:
Sweet baby beets (uh-oh, it has sugar in it, so leave out for JS)
Green pepper slices
Broccoli (buy washed and ready to eat)
Mini sweet peppers (orange and yellow, or any color)
Edamame
Arugula and/or spinach
Celery and carrot sticks
Tomatoes (I used Campari size)
Cucumber slices
Strawberries, apple slices, and banana sections (I left the peel on)
Dates (not sure this is JS compliant- they are hiding in the picture!)
Romaine tucked under some of the items
Clementines
Hummus (JS recipe book, p. 33- it is absolutely delicious!)
Note: You can use anything you have on hand. This recipe is a little time-consuming, but you can cut up the veggies and fruits ahead and arrange them carefully in a storage container for later or next day. If I prepare this for just me, I make a much smaller plate, of course!
Note: After JS, I would add walnuts. Also, I would put crackers on the board, too. There are crackers which are JS compliant. Grapes are a great addition. Also pomegranates and dried fruits. There are also some vegan cheeses, but they are high in fat, not JS compliant. Save them for a special occasion in a few months? I bet you can think of other great things to put on your board!
