Luanne S Veggie Stir Fry
Credit to RLMI
Stir Fry main ingredients
carrots, broccoli, green beans, bell pepper, zucchini
Stir-Fry Sauce
2 tbsp cornstarch
Cooked brown rice
cider vinegar or rice vinegar
1 tbsp soy sauce
1 tsp each of minced garlic and minced fresh ginger,
2 to 3 scallions, sliced (both white and green parts)
sherry, add 1 to 2 tbsp.
Directions:
1. In a large frying pan or pot, in a small amount of water (or white wine, sherry, or vegetable broth) sauté a variety of vegetables such as carrots, broccoli, green beans, bell pepper, zucchini.
2. Go from the “hardest” vegetables (those that take longest to cook) in sequence to those that need little or no cooking (the list above is in approximately the right order).
3. When the stir-fry is done or almost done, add the stir-fry sauce in, bring it to a simmer, and let it thicken. Serve over BROWN RICE (page 7) .
Stir-Fry Sauce:
1. In a medium sized bowl, measure out 2 tbsp cornstarch.
2. Gradually whisk in 1½ cups of water.
3. Add 2 tbsp cider vinegar or rice vinegar, 1 tbsp soy sauce, and about 1 tsp each of minced garlic and minced fresh ginger, and 2 to 3 scallions, sliced (both white and green parts). If you have mirin (sweet rice wine) or sherry, add 1 to 2 tbsp.
4. Bring the sauce mixture to a boil to thicken. You can do this by adding it directly to the sautéed veggies and heating them through till the cloudy sauce bubbles and becomes clear.

Above is the Stir Fry recommended to us.
Lessons Learned: 1) The instructions reinforced the importance of cooking the veggies densest to least dense. This reminder was helpful. TY! . 2) Experiment w freezing: One of my goals in this class is to practice freezing complete meals for easy, future consumption. I froze half of this final dish. 3) Presentation matters. I normally don’t put much thought into presentation but my husband retrieved these Hokusai dishes and chopsticks for this dish. This made the experience more whimsical and “authentic”. 4) Partner support matters. Having a supportive household member makes a HUGE difference. ❤️
i may add more recipes but for now i hope i at least have my homework 😇 completed
I appreciate you requiring us to make and post our recipes. This allows the us to be more engaged and accountable TY!
