Matt L- Apple Date Compote Topping for Waffles
The following recipe is good as a topping for Navy Oatmeal Waffles, adding some fruit sweetness while still Jumpstart compliant.
Apple Date Compote
Whole-Food, Plant-Based • Vegan • Oil-Free
This naturally sweet apple compote uses dates instead of added sugar, making it a simple, wholesome topping for oatmeal, waffles, pancakes, or other whole-food, plant-based dishes. It can be served warm, at room temperature, or chilled.
Ingredients
2.2 pounds apples (Granny Smith, Braeburn, Fuji work well, or your choice)
12 pitted dates, very finely chopped
Juice of ½ lemon
1 cup water
1 teaspoon vanilla extract, or to taste
1 teaspoon cinnamon, or to taste
Instructions
Prepare the apples. Peel and core the apples, then cut them into small chunks. Place the apples in a saucepan.
Add the dates. Finely chop the pitted dates and add them to the saucepan.
Cook the apples. Add the lemon juice and water. Cover and cook over medium-high heat until the apples are very soft and have begun to break down, approximately 20 minutes. Stir frequently to prevent the compote from sticking to the bottom of the pan.
Purée the compote. Once the apples are fully cooked, use a fork to mash them into a smooth compote. Alternatively, leave some of the apples chunky if you prefer a more textured topping.
Season. Allow the compote to cool slightly, then stir in the cinnamon and vanilla to taste.
