Moroccan Couscous Chickpea Salad

Cupful of Kale is a website that clearly states it is “always vegan, mostly healthy” but if you are whole-food plant-based, you can still find a lot to enjoy there. Tamsin, who owns the site, uses items like vegan cheese, vegan cream cheese, vegan chorizo, vegan chicken pieces, etc., which you can avoid or substitute for, according to your preference Interestingly, in many cases, when Tamsin uses oil at the reflexive “use oil to sauté the onion and garlic” stage, she doesn’t list it as an ingredient but does refer to it in the recipe instructions. In a way, this “works,” because those of us who are oil free can just let our “oil-free technique” kick in at that point.

Cupful of Kale was created by Tamsin, a recipe creator who hails from Great Britain or a former colony. I have kept a few Britishisms in the recipe that I feature here, like “tinned” instead of “canned,” although I did convert metric to American units of measure! You can easily google the conversion from metric, if you decide to use other recipes from the site.

Tamsin does recipe development and food photography, and is willing to work with restaurants and food companies to promote vegan products and dishes. You can reach her at cupfulofkale@outlook.com
