Pea Soup With Benefits

INGREDIENTS:

2 carrots, 3 celery stalks, 1 onion, 2 cloves of garlic, 1 bay leaf

1 medium sweet potato, 16 ounce bag of frozen kale,

1 bag of dried organic peas,

2 cartons of low sodium vegetable broth (32 ounce each)

salt, pepper

INSTRUCTIONS:

Sauté the sliced carrots, celery, onions, using dash of white wine, medium heat in 5 qt pot for 8 minutes. Stir frequently to avoid burning the veggies. Add the chopped garlic and stir for a few minutes.

Rinse peas and place them in the pot with bay leaf.

Pour in vegetable broth, stir, and bring to a boil.

Let soup simmer on lower heat once it boils for approximately one hour or until peas are getting soft.

Add sliced sweet potato, as they get soft, add the bag of kale and mix everything together.

After a few minutes use a hand held immersion blender and purée the ingredients.

Serve with a slice of Ezekiel bread toasted with a spread of garlic and balsamic vinegar.

Salt and Pepper to your taste.

I try to use organic ingredients when cooking if possible.
