Savory Oatmeal

(from Pickles & Honey)

Ingredients:

For the savory oatmeal:

    • 1/2 cup gluten-free, old-fashioned rolled oats

    • 3/4 cup plain non-dairy milk (I prefer almond or cashew milk)

    • 3/4 cup vegetable broth

    • 1 tablespoon nutritional yeast

    • 1/4 teaspoon turmeric

    • 1/4 teaspoon chili powder

    • 1/8 teaspoon garlic powder

    • 1/8 teaspoon onion powder

    • sea salt to taste

    • 1-2 large handfuls of greens (e.g.,  kale, baby spinach)

Optional toppings:

    • diced avocado

    • sliced green onion

    • salsa

    • sriracha

    • sprouts

    • crumbled veggie burger

    • brown rice crackers

    • lightly toasted seeds or nuts

Instructions:

    • Combine all of the savory oatmeal ingredients, except the handful of greens and salt, in a medium saucepan and bring them to a boil over medium-high heat.

    • Reduce the heat to medium-low and cook the oats for 6-8 minutes, stirring frequently, until they have thickened.

    • Add in your greens of choice, salt to taste, and continue to stir for an additional minute or two, until the greens are slightly wilted. Transfer the oats to a bowl and add whatever toppings you like.

Pickles & Honey is the site of Amanda and Aaron, who live in California with their daughter Sonoma and three dogs. They both have quite impressive resumés, Amanda in SEO and Aaron as a graphic designer, but I will leave it to you to visit their lovely website. It’s enough to say that, after building and managing a multimillion SEO department, Amanda was able to make Pickles & Honey her full-time job. The site does have affiliates (companies that are mentioned in exchange for support) but it does not have a commercial feel, and the recipes are free (the photos are lovely too!).

(It’s interesting to me that, though Aaron is a graphic designer, the logo is just the name of the site—in nice font, however!)

Amanda and Aaron say: “We take favorite recipes and simplify them to the essentials, always with a plant-based twist.”

Pickles & Honey is named after two dogs. However, coincidentally, the site is entirely plant-based except for the fact that some recipes use honey. I have made an exception to my usual rule of featuring only completely PB sites, because honey is so easy to work around in a recipe—just use agave instead. (There are even a couple of products that tweak agave to taste even more like honey, if that matters to you, like Mellody Plant-Based Honey.)

The site is plant-based except for honey but some recipes do use oil or vegan processed foods like vegan butter.

We hope you enjoy this recipe for Vegan Savory Oatmeal! To make it Jumpstart-compliant, leave out some of the suggested garnishes (avocado, seeds/nuts, and veggie burger).
