Simple Lunch or Quick Dinner Burrito

This is super simple and reminds me that grabbing a healthy meal doesn’t need to be complicated. I looked in the panty and fridge and realizized, I can go Mexican! One of my favoritres.

Ingredients:

  1. Ezekiel tortillas (I used sprouded flourless)

  2. 1 can of refried beans (I use low-sodium)

  3. 1 bell pepper of choice

  4. ½ onion - or more (I used white)

  5. Jalapenos

Seasonings:

Cumin (by taste)

Garlic powder (by taste)

Other seasoning of your choice

Heat the refried beans. Saute bell pepper and onion, add seasonings of choice - use small dose of vegetable broth to prevent sticking. Just before serving, microwave one tortilla for 30 seconds. Spread heated refried beans over warm tortilla, cover with sauted bell pepper and onion. Add jalalpenos according to spice level you like.

If preferred, add salsa or greens on the burrito and add greens on the side for a complete meal.

I found it very satisfying and realized after that it happened to be Cinco de Mayo and I have leftovers for another meal!
