Slow Cooker Maple Lentils

Easy and delicious! A quick assembly of pantry items I had on hand produced a warming dinner on a snowy day . . .

½ cup chopped red onion (Any kind of onion will do)

½ cup chopped carrots

1 ½ cups dried green lentils, rinsed (not French green lentils, just the usual supermarket brown or green)

3 cups water

¼ tsp dry mustard

¼ tsp dried ginger

¼ tsp garlic powder

2 TBS low-sodium soy sauce

4 TBS maple syrup

Put all ingredients into the slow cooker and give it a stir.

At this point, I tasted a little of the liquid to see if I wanted to add anything else, but it tasted good to me. Cook on low for 6 hours. (Can probably cook on high setting for 3-4 hours).

This made 6 cups of lentils, so even if you serve yourself a very generous cupful, you will still be under the allowable daily amount of maple syrup.

It would be great over rice or quinoa. I put it over some steamed broccoli and mashed sweet potatoes.
