Smokey Vegan Carrot Dogs

We love these carrot dogs! They taste remarkably like the real thing. The original recipe was by author: Chuck Underwood, however I altered them from the original recipe. These are easy to take for a ‘grill out’ at other locations. I sometimes grill these in bulk to store in the refrigerator for a quick and easy warmup snack in the microwave.

¼ C Braggs Essential Amino Acids (or low sodium soy sauce)

¼ C Apple Cider Vinegar

¼ C water mixed with 1/2 tsp “Better than Boullion'‘ vegetable broth concentrate

2 Tbs Maple syrup

1 Tbs Liquid smoke

1 tsp yellow mustard

1 tsp fresh garlic, minced

½ tsp. onion powder

Cut and peel carrots to make them “bun length”

Boil carrots in water until just fork tender 15 minutes or longer depending on size.

Drain the carrots, rinse with cold water and drain. Place carrots in a Ziplock freezer bag.

Whisk all marinade ingredients together and pour into the bag with the carrots.

Marinate in refrigerator for 4-6 hours

Grill (or broil) the carrots on an open grill, basting occasionally.

Grill long enough to heat through and leave some grill marks.

NOTE: There will be a lot of marinade (which is a strong flavor enhancer) leftover. So although it looks like a lot of liquid you are only eating the portion absorbed by the carrot dogs.
