Spinach Pesto
Hey all! I wanted to share one of my favorite recipes with you – it’s super easy, packed with greens, and delicious.
Spinach Pesto
You need a good blender or food processor. All the measurements are approximate, I always eyeball.
Grind a cup of nuts (sunflower seeds, walnuts, cashews, etc), a cup of nutritional yeast, some salt, and a clove or two of garlic in a blender/fp until you get a fine mixture.
Defrost a pound of frozen spinach in the microwave. Add the spinach, a handful of basil or other herbs (optional), juice of a lemon, a few glugs of olive oil, ground pepper, and any other spices you want and blend until very smooth. At this point I’m balancing the flavors. Add things to get the level of savory flavor you want. Trader Joe’s has a good onion salt that’s got lots of good flavor. You could try a mushroom powder or something else that adds umami, like light miso or a few dashes of soy sauce.
Make 3/4 lb to a pound of pasta. I really like Trader Joe’s yellow lentil and brown rice spaghetti because it’s delicious and has lots of fiber and protein.
Mix the sauce and pasta thoroughly. Serve with tomato salad or something with sweetness and acidity.
