Sweet Potato Black Bean Burger
This is my most favorite whole plant based main dish. I cannot take credit for it because it comes from The Blue Zones Kitchen Cookbook (if you are not familiar with Blue Zones, google it, it is very fascinating). Besides being delicious, it is very easy to make variations of it. Also, the burgers freeze well.
1 1/2 cups rolled oats
1 cup peeled, mashed, cooked sweet potato
1 cup mashed cooked black beans (variations could be lentils, chick peas or kidney beans)
½ tsp salt
2 tsp onion powder
1 tsp ground cumin
1 tsp smoked paprika
½ tsp black pepper
4 whole wheat burger buns
Pulse the rolled oats in a food processor and set aside.
Combine sweet potato, black beans and seasonings then incorporate rolled oats and mix well. The patties cook up well on a no-stick fry pan or bake in the oven for approx 30 minutes at 350F. This recipe makes 4 burgers. Add toppings as you would any burger, I usually add on a layer of greens to my toppings of ketchup and pickle.
