Talbina!
Ingredients:
1 cup whole barley
6-7 dates, pitted
3 tablespoons of honey (can sub maple syrup if desired.)
3 cups of water
2 cups of soymilk
cinnamon and cardamom to taste
Instructions:
-Combine the barley and water in a pot and bring to a boil uncovered (a lot of foam is produced when the barley first boils so make sure you use a large enough pot.) Once it is boiling, reduce to a simmer and simmer until soft, about 45 minutes.
-Once it is cooked most of the water will be absorbed by the barley. At this point, add all of the other ingredients and simmer for another 10-15 minutes to combine the flavors.
-Garnish with saffron threads, cinnamon, or mint, and enjoy.
Makes 5-6 servings.
Talbina is an important food in many Muslim cultures. It is traditionally given to the grieving and the bereaved.
“Talbina soothes the heart of the afflicted and relieves him of some of his sadness.”
-Prophet Muhammad
It has worked for me! ;-) Is also a great way to become reacquainted with the currently underused ancient power grain, barley. I hope you all enjoy.
Notes: If you have trouble finding whole barley a lot of these grains like barley, farro, freekeh, and other things I am just learning about, as well as a wealth of variety of legumes, can be found in Middle Eastern stores. Whole barley is different from pearl barley - whole barley is a whole grain and is better for health, although it does take a little longer to cook.
