Tofu Loaf and Mushroom Gravy

Sometimes simple is better. This savory Tofu Loaf is tofu-and-stuffing rolled into one. It’s worthy of Thanksgiving and also any weeknight of your choosing, it’s just that easy to make.

It dates from early in the 20th century rise of vegetarianism in the US and is a classic! The recipe comes from Louise Hagler’s book Tofu Cookery (1982, revised edition 1991) and is associated with The Farm, a plant-based intentional community that was founded in 1971 and still has about 200 residents. Tofu Cookery was brought out  by The Book Publishing Company, an enterprise of The Farm dating back to 1974 that has published numerous titles on healthy and sustainable living, including many beloved vegan and vegetarian cookbooks. The Farm also has a charitable works arm called Plenty International, which is good about not spending money to raise money!

If you have leftover Tofu Loaf, it makes a good cold sandwich with mustard or whatever condiments you like.
