Vegan Mac and Cheese w/out Cashews
Olivia Biermann and Greg Bellefontaine are the creators of It’s Liv B (Greg’s Vegan Gourmet is a branch of the website). It’s a "food blog for people who want quick and accessible plant-based recipes, without sacrificing taste or convenience.” Liv and Greg married in 2022 and welcomed a son in 2023. They live in Nova Scotia, Canada.
Liv also started a YouTube channel in 2016 “to share her new found love for creating recipes and help people fall in love with vegan food!” Liv and Greg “focus on a mix of comfort & more health conscious recipes, while keeping everything entirely plant-based.” Recipes include a collection of “47 Best Vegan Sandwiches” (fair warning—many use processed foods as ingredients).
Today’s featured recipe is Vegan Mac and Cheese without Cashews. This is the first time I have featured two successive posts on the same website! The reason is that, after I had done all the work on the first post and recipe, I noticed Liv’s recipe for Mac and Cheese and I realized it is so much like the way that I make mac and cheese, which is so easy and simple and works so well. A couple of differences: I cook the macaroni separately and don’t make it a one-pot meal; and I don’t put in the shredded commercial vegan cheese (which can easily be left out). Otherwise, the flavor combinations are exactly the same as what I have used many times, so I wanted to share it. Enjoy!
