Vegan Nachos Mac and Cheese

Robin and Ameera, the mother-daughter duo behind Monkey and Me Kitchen Adventures, have been WFPB since 2016, and Ameera received her Plant-Based Nutrition certificate from the Center for Nutrition Studies/eCornell in 2018.

The blog started out as a family affair, testing and sending recipes for an out-of-state son/brother who had recently gone gluten-free. Then, Robin writes, on “one fateful day”: “Monkey and I happened across the “Forks over Knives” and “What the Health” documentaries on Netflix in 2016.  From that day forward, we switched from a gluten-free vegetarian diet to a Whole Food Plant Based lifestyle, and we are loving the journey and having a lot of fun in the kitchen.”

“Monkey” is Ameera, and you’ll have to visit the blog to find out why! The site features beautiful food photography, videos, and loads of resources for new or inquiring plant-based eaters to explore.

As for the choice of recipe: RLMI’s Medical Director, Dr. Graff, always refers to the Monkey and Me cheese sauce as the obvious go-to recipe. It turns out, not surprisingly, they have several cheese sauce recipes! Even if this isn’t the one Dr. Graff has in mind, it sure looks good. We hope you enjoy Vegan Nachos Mac and Cheese.
