Very Plain Minestrone Soup
Rochester Lifestyle Medicine Institute as modified by Jana Wolfgang
1 onion, chopped
½ tsp garlic powder
4 14.5-oz cans diced organic tomatoes (no salt added)
4 medium yellow potatoes, peeled & diced)
1 teaspoon each basil & Italian spice
½ teaspoon each salt & pepper
4 carrots, diced
4 stalks celery, diced
½ head escarole, chopped
2 cans organic kidney beans (no salt added)
~6 cups water: add to liquid from canned tomatoes to make ~8 cups liquid
1. Use large (6 quart) pot.
2. Chop /dice all vegetables. Keep potatoes, carrots & celery in water until ready to add to the pot. Chop escarole just before assembling.
3. Mix everything except potatoes and pasta in big pot.
4. Bring to boil; simmer for about an hour.
5. Add potatoes & pasta. Cook an additional 15-20 minutes until potatoes are a little soft.
This made multiple servings (6-8). It was hearty and very plain, which was just right for me.--Jana
