Vickie S - Mexican Lentil Tostada (random entry)

Instant Pot Lentils (Mexican flavor)

2 cups dry lentils (any kind)

4 cups broth, or water

½ cup salsa

1 tsp onion powder

1 tsp garlic powder

1 tsp chili powder

½ tsp cumin

Add all ingredients to Instant Pot.  Stir.

Cook on High pressure for 15 minutes.

When it beeps that it’s done, place towel over valve and QUICK release. (I got distracted so didn’t use a quick release, I used natural release)

Stir and serve

Spread ¼ cup mixture in taco shell or on tostada shell.

Top with your favorites, such as tomatoes, lettuce, corn, lettuce

If found it by Googling Instant Pot Lentils.

Note: I was pleasantly surprised how flavorful this was.  I spread the lentils on a Tatemada brand tostada (www.Tatemada.com) that I just learned about from Chef AJ. They are made without oil and are great for the crunch.  I topped it with a few green onions, lettuce and salsa.

These tostadas are bit pricey, but worth it when you need that crunch.  They definitely do the trick.

I served it with Mexican Cauliflower Rice on simplyplantbasedkitchen.com
