Here’s an example:

Spicy Creamy Polenta

Ingredients:

  • 1 cup dried polenta (I use Bob’s Red Mill brand)

  • 2 cups water

  • 2 cups plant milk

  • 1 small can hot green chilies, drained

  • 2 Tbsp. nutritional yeast plus additional for topping

  • 1-2 Tbsp. Penzy’s Arizona Dreaming spice or any combination of Mexican spices

Instructions:

  • In a medium saucepan, combine polenta, water and plant milk.

  • Heat to boil and then reduce heat to medium and cook according to package directions, about 30 minutes, stirring often.

  • Add the green chilies, yeast and spice and mix until blended.

  • Serve with a sprinkling of additional nutritional yeast and a dollop of your favorite salsa.

  • Goes well with sautéed veggies and black beans.

Comments:

You can use your imagination with this polenta. Sautéed onions, red peppers, cilantro, etc. might be good additions too.
